I love roasted chicken. But in Phoenix you do not want to run your oven in the summer. I bought the baby George. Place it on a table on the patio and it has cooked dozens of chickens (5-6 lbs each) First skewer the bird and fasten the skewer leaving it close to the end so you don't scrunch up the bird making it wider. Use two pieces of cotton tie, the first tie around the legs and tie them close together then pull them in close to the bird and tie around the body, the second tie around the chest trapping the wing tips. Season, place in rotisserie. Here in the summer a 5 lb bird takes about 1 hour outside. In the house about 1 1/2 -2. The skin comes out amazingly crunchy and the meat tender and juicy. Highly recommended. When this one needs replacing I will buy the next bigger one so I can do larger roasts. It is great for lamb chops using the cage as well.
